The Technology
Traditional barrel aging works because repeated cycles of temperature and pressure force spirit in and out of wood, triggering esterification, oxidation, and lignin breakdown. We replicate those conditions at high speed using ultrasonic micro-cavitation — millions of microscopic pressure events per second.
Any neutral grain spirit at 190 proof, white whiskey, unaged rum, or tequila blanco goes into the Cali Shine system alongside charred oak chips or spirals.
High-frequency acoustic waves create millions of tiny pressure events that drive spirit deep into oak cells, extracting vanillin, tannins, and lignins at accelerated rate.
The acoustic energy also accelerates the chemical reactions responsible for smoothness — ester formation, aldehyde reduction, and alcohol-water integration.
Output is proofed to target ABV, filtered through the same post-production steps as conventional aged spirits, and ready to blend, bottle, or white-label.
